Almond Flour Banana Bread

Ingredients
2 cups finely ground almond flour
3 overripe bananas
2 eggs
1/2 tsp salt
1 tbsp baking powder
1 tsp vanilla
pinch of nutmeg
*or whatever seasoning your heart desiresagave or honey
Directions
- Grease or line a 9×5 loaf pan
- Preheat oven to 325 F
- Mash bananas in a medium bowl
- Mix the remaining ingredients in the same bowl with the bananas until smooth
- Pour the batter into a greased loaf pan
- Bake on the center rack 50-55 minutes
- Optional: Once the bread is out of the oven, drizzle the top of the bread with agave or honey
- Let the bread sit until completely cool. Use a knife to gently go around the edges to loosen the loaf up and pop out of pan.
Notes
- I like to use parchment paper in the loaf pan when I bake this bread. Once it's cooled, you can lift the paper and slice it right from the paper.
- There is no sugar in this recipe and won't be real sweet unless you add the agave or honey to the top of the bread after baking. If you don't mind it not being very sweet, totally omit this ingredient. It is tasty with or without the added sweetness!
- If nutmeg isn't your thing, feel free to omit it. You can also add more, use cinnamon, cloves, etc - whatever your taste is asking for, do that.
